Passion Fruit Panna Cotta

Ingredients quick pickle

  • 40 grams of sugar
  • 600 ML cream
  • 300 Full fat milk
  • 9 grams gelatine
  • 15 grams of passionfruit fresh concentrate (

 

    Instructions

    1soak the gelatine in cold water for 5 minutes

    2Mix milk, cream, sugar and bring to the boil. Take of the heat and mix in passion fruit and wish in the gelatine. Ensure is below 80 degrees celcius otherwise the gelatine does not work as effective.

    2poor in shapes max an inch high. cover in plastic to avoud a skin. To geth out of th mold put for 1 minut in a hot water bath 60 degrees and then they will release easily.

Decorate with passion fruit, chocolate ice cream, tuille, mango coulis etc.
