BBQ Chicken Pasta with Peaches

Summer calls for BBQ. Enjoy the fruit of the sunshine together with delicious chicken.

Ingredients

  • 400 gram Spagetti cooked. USe 10 grams of salt per liter of water. Slightly undercook the pasta by 1 minute
  • 400 gram of BBQ chicken without the bone cut in pieces ideally grilled on charcoal
  • 2 finely diced chopped onions and 2 cloves of finely diced garlic
  • Diced and fried bacon or panchetta(not crunchy)
  • A good BBQ for serving and cooking if you have no BBQ
  • Salt and black pepper to taste
  • 3 ripe pieces diced with the skin on
  • 2 Tbpsn Balsamic vinegar
  • 1 can of diced tomatoes
  • A little honey to taste. Becare ful do not use too much.
  • 4 diced fresh tomatoes without the seeds. Remove the skin by slicing their skin and put them in boiling water for 10 second follow by a brief bath in cold water. Pull off the skin and remove the seeds. Dice them in 0.5 Cm cubes

 

    1Fry the onions. Add the balsamic vinegar. Reduce to a sirop. Add the garlic and bacon. Add the chicken, canned tomatoes.

    2Gently combine the Add the BBQ sauce to taste. Cook for a little reduce and then addd the pasta. Reheat the pasta . Add a knob of butter for taste plus salt and pepper.

    3Mix the pasta with the chicken and all other ingredients except the peaches. Just before serving add and spoon in the peaches..
