Super Fast Cherry Cake ala Remy

A delicious fruitcake with yes cherries. OR anotherfruit of your choice
Ingredients
- 130 gram unsalted butter melted to room temperature
- 400 grams fresh sweet cherries half of them chopped in half (rinse and dry them before) 40% to fold in the dough and the rest to put on top of the cake after 10 mins of baking
- 150 gram flour
- 75 grams ground almonds or hazelnuts
- 1.5 tspn baking powder
- 0.25 tspn salt
- 2 large eggs(<63 grams="" or="" 3="" small="" ones="" 53="" each="" li="">
- 100 grams white or brown sugar
- 1 - 2 tspn vanilla extract
- 1 tspn almond extract and rhum extract
- Optional 100ml milk and a 4 CL of Ameretto and Cherry liquer
- Preheat the oven to 200 degrees!
- line the baking shape a 16 -20 cm sping shape or solicone mold, greased in or lined with baking paper
Method
1Whisk together the flour, ground almonds, baking powder, and salt
2In a seperate bowl mix the eggs, sugar untill white and thick. Now add the aromas and add the melted butter and milk gently fold this in. Mix in the cherry liquer and amaretto well.
3From the other bowl fold in the flour mixture gently follow by your halved cherries
4Bake the cake for 7 - 10 minutes and put the whole cherries on top and they sink in for the remainder of the baking distrubute them evenly
5Bake the cake for another 5 - 10 minutes until cake tester comes out clean.
6Cool on a wire rack
Optional Serve with vanilla infused whipped cream. Enjoy this delicious slice of summer!
