Sous Vide Porkbelly with Riesling Kabinett

The ultimate comfort food! Slow cooked porkbelly with a sweet soy and chili sauce. Crispy!

    Ingredients

  • 40cl Sweet soy sauce
  • 10cl Salty soy sauce
  • 1 KG of porkbelly
  • 1 tspn chili flakes
  • 120 grams of long grain rice per person
  • 1 bottle of excellent Kabinett

 

    1Put the porkbelly with the soy sauce, chili flakes in a sousvide pag and cook for at least 36 hours (ideal 48) slowly at 64 degrees

    2Cook the rice 1 hour before. Add anis, cinamon stick, cardomon pod in the water before let the water infuse (works better when the water is warm!) with this then bring to the boil and add the rice cook as disired

    3Dry off the pork and make the top slide crispy with a mapp gas burner

    4Reduce the sauce on the stove and serve with rice and a good glass of Riesling kabinett

    Optional: Add some fried onions and soe Sambal
