Peanut Foam

Delicious peanut foam that works with soups and other flavorful dishes.
Ingredients
- 60 grams of unsalted butter
- 200 grams of creamy 100% no additives peanut butter
- 150 grams of sugar (only for desserts leave out for savoury dishes)
- 60 ML Double cream
- 6 grams of gelatine welted
- 4 grams Xanthum Gum
- 3 grams salt
- 45 ML water /ul>
1Weld and let the gelatine absord the water. A the same time bring some water to the boil in a seperate pan. Remove form the heat and ad the 3 grams of salt. Add the butter and whisk. Whisk in the gelatinem xantum gum and blend with a kitchen blender.
2Transfer to a kitchen mixer and whisk till all is mixed together add to the Siphon and set for 2 hours
Optional: dd food coloring to give it a more peanut color and or chili oil to give it a kick.
