Oliebollen or Dutch Donuts (Almost)

Traditionally for New Years Eve but can be enjoyed at any time as they are very addictive.

Ingredients

    • 500 grams of flour or whole wheat flour
    • 200 ml luke warm beer and 300 ml luke warm water
    • 10 grams salt
    • 5 grams cinnamon
    • 14 grams dry yeast (approx 2 bags)
    • 1 tspn lemon juice
    • 200 grams soaked raisins
    • Addtional fillings for this recipe use no more than 300 grams of filling
    • Rum soaked raisins
    • Cranberries, Ginger, orange and other candied fruit
    • Apple (add an additional 5 grams of cinnamon), pineapple, cherry and other well dried fruit
    • Orange and lemon zest, add chocolate pieces

    Preparation

    1Sieve the salt and the flour, add the cinnamon yeast and sugar. Mix well

    2Add the water, lemon juice and beer. Mix well. Add the dried filling qand mix gently

    3Leave the mixture for 1 hour until it has doubled in size

    4Get the frying pan with 2 liters of sunflower oil and heat to 180 degrees celcius

    5Use two spoons or an ice scooper to portion the dough and let them gently in the hot oil. Fry 6 - 8 minutes until golden brown. Once ready drain on kitchen towel and cover in powder sugar
