Nasi & Bami Goreng

This is a classic in the Indonesian Kitchen and certainly in the Dutch kitchen. Exported from the wonderful country of Indonesia

 

Ingredients

    Boemboe

  • 2 – Onions in cut fine
  • 4 – 6 cloves of garlic finely chopped preferred sliced
  • 1 – 2 tspn of Trassi (Shrimp paste) Use the black dried block or the grey paste (careful this can be quite smelly when you add it to the pan!) Do not use too much!
  • 2 -4 tspn of Sambal Oelek or I like to use sambal manis
  • 2 -3 tbspn of cumin powder (jinten) better roast whole seeds and crush them into a powder!
  • 1 -2 Tspn of peanut oil
  • Meat Preparation

  • 4 – 6 chicken thighs
  • 200 grams smoked pork belly chopped in small cubes
  • 300 grams chopped pork in medium cubes
  • Optional: 6 large shrimp for decoration.
  • 2 – 3 tspn Djahe powder (ginger)
  • ½ tspn grind black pepper
  • 1 beef stock (jelly or fresh reduced) use amount for 50 cl of liquid
  • 1 tspn assem (tamarind powder)
  • 2 Tspn Ketjap Manis (Sweet soja sauce)
  • Optional

  • Optional: 1 tspn galgaut (galangal) powder
  • Optional: 1 tspn Curcuma powder
  • Optional: 1 tspn Koriander powder
  • Rice for Nasi and Mie for Bami

  • 400 grams of long grain rice. Almost cook to instructions but leave a little under cooked. The rice should still have a very little bite as it will continue to cook with the other ingredients. Prepare the rice a day in advance is better to ensure it does not stick together
  • Optional:3 eggs for the rice and fry them
  • 300 grams of Mie. Undercook just a little in water with chicken stock (carefull not too salty) and a clove of garlic
  • 2 leeks finely chopped. Do not chop the “tough” part of the leek. Cut the rings in half
  • Preparation

    1Making the Boemboe: Add some peanut oil in the pan. Add the chicken legs and fry for 20 minutes turn every 2 – 3 minutes. Once the chicken is cooked removed from the pan. Once the chicken is cooled down remove the meat from the bones and schred in medium pieces Put aside and let cool down. Now add the cumin, garlic, trassi and sambal. Add a little water and let it reduce.

    2Add the smoked pork belly, chopped pork, ginger, black pepper, beef stock jelly, tamarind and cook for 15 minutes. Add a little water is the liquid has evaporated. Now add some sweet soya sauce to taste.

    3Mix in the Mie or the cooked rice. (Optional fry some eggs with the rice and them add the Boemboe meat mixture

    Now add some sweet soya sauce to taste. Service with Sweet soy, sambal and bean sprouts and some crumbled roasted peanuts. Kroepoek (Shrimp crackers) should not be missing…Make some saté sauce…. Delicous with nasi or bami  goreng.
