My easy pepper sauce recipe.
Ingredients
- 250 gram of washed chili peppers of your choice. Red habanero is fabulous.
- 50 - 100 gram coriander (Go for 50 grams at the beginning)
- 50 - 75 gram garlic if you like garlic
- 50 cl white vinegar
- salt and pepper to taste around 8 grams or more go for around 2% of ingredients weight. Is 2% of approx. 350 grams is 7 grams of salt
- Optional:20 gram lime juice
- Optional:100 gram of chopped onion
- Optional:Add a carrot
- Optional:add water to get the right thckness you desire
- Optional:Add some rhum and a little cane suger
1Go to step two or heat some olive oil or oil of your choice and fry the garlic and optional onion for around 5 minutes
2Add all the ingredients to a blender and mix well
3If not fine enough press through a fine sieve and pount into a clear disinfected bottle (Pour boiling water in the bottle before you add the ingredients)
Optional leave out of the fridge for 3 - 4 days open the jar or bottle every day to release the "fermentation gas" In the fridge leave in a container with a little opening. At your own risk. Enjoy this amazing sauce that get better over time.
