The Dutch dessert :) . Reminds me so much of my childhood what a delicious simple dessert make in advance and serve cold.

    Ingredients

  • 120 grams white or brown sugar
  • 600 ml full fat milk
  • 250 ml strong cofee
  • 20 grams of cornstarch
  • optional but advised 2 tspn of instant coffee
  • 3 egg yolks

 

    1Carmelize the sugar in heavy pan make sure the temperature does go above 144 degrees celcius!

    2Mix the coffee, milk and instant coffee until dissolved. Leave a third of the coffee for the third step.

    3Stir the milk coffee mixture into the sugar. Keep stiring to release the caramel from the bottom of the pot. and bring to the boil

    4In another bowl mix the cornstarch and egg yolks add the left over coffee and mix. Now add to the sugar milk mixture in the other pot. And bring back to the boil for 2 - 3 minutes it will thicken. Keep stiring to avoid burning! Cool slowly and cover with plastic to avoid a skin. Enjoy cold with cream!
