Going Greek - Greek Rice with Feta, Giros and Tzaziki

This is one of those dishes that is delicious and brings lots of flavor and texture. Delicious meat and rice with Tzaziki!

Giros Ingredients

  • 4 Lamb or pork chops at least 1.5 cm thick
  • 4 cloves of garlic finely chopped
  • 3 tspn Marjoran
  • 3 tspn Thymian
  • 4 tspn sweet paprika
  • 1 tspn cumin powder
  • Salt and Pepper to taste
  • 2 Tspn olive oil
  • 2 Onions slices lengthwise in longs stripes

 

    1Combine the garlic, herbs, spices together with the oil and mix together. Marinade the meat with this mixture. There are two ways. a) debone the pork chops and cut in 2 cm piece or b) marinade the porkchops. Let this marinade work for at least 4 hours. If you can in a vacuum sealed bag from your sousvide machine

    2Add a little oil to the pan and fry the onions untill soft and brown.

    3Fy the meat gently around 8 - 10 minutes until brown and still juicy. Keep the pieces of fat for flavor from the meat.

    Greek Rice Ingredients

    • 250 grams of long grain rice cooked to instructions. Minimally undercooked
    • 1 red and one yellow paprika finely diced ala brunoise (Brunoise: A fine dice, usually made by dicing from an alumette cut)
    • 250 grams Aubergine diced in 1cm cubes. Fry these untill light brown and cooked
    • 1 leek washed and finely sliced ony the white piece.
    • 3 cloves of garlic finely sliced
    • 3 branches of oregano or 2 tspn dried
    • Optional: add finely diced lamb minced meat 250 grams
    • 200 grams of Feta cheese diced in 1 cm cubes
    • Salt and Pepper to taste
    • 3 Tspn olive oil

     

      1Add oil to a frying pan. Combine the paprika and aubergine. Fry after 5 minutes add the garlic and oregano leaves. Then add the rice and mix together with the rice.

      2Add the end add the feta cheese cubes and mix gently.

      Tzaziki Ingredients

      • 500 grams of fromage blanc or quark or full fat greek style yoghurt. I prefer fromage blanc
      • 150 gramsfull fat greek yoghurt
      • 1 grated cucumber
      • 3 crushed cloves of garlic
      • 3 cloves of garlic finely sliced
      • Chicken stock for 250 cl diluted with a little yoghurt (2 tspn)
      • Salt and Pepper to taste
      • 2 Tspn olive oil

       

        1Mix the fromage blanc and yoghurt with chickenstock and garlic. Add the grated cucumber. Add pepper and salt to taste.

It is a good idea to make the Tzaziki in advance. Cook the rice a little before and a minimal undercook is good. Serve with a good glass of Greek red wine or a nice Syrah from the Northern Rhone. Just thinking of Cote Rotie.. Alternatively a good bottle of sparkling wine such as a young fresh champagne like Landon. This is comfort food with a smile. And yes Tzaziki and champagne do go together!
