Giros on the BBQ

BACK

This dish originates from Greece. Use the spice mix to marinate the meat. Leave for a day and it will taste even better

 

Ingredients for the Spice Mix

  • For the Giros spices use the quantities below. Put in a bowl and grind down to a powder. Ideally use whole spices. and toast them a little when whole do not toast the powder.
  • 4 Tbspn Oregano
  • 2 Tbspn Majoran
  • 2 Tbspn Thymian
  • 5 Tbspn smokd paprika powder/li>
  • 4 Tbspn Caraway
  • 0,5 Tbspn Cumin
  • 2 Tbspn Summer Savory
  • 2 Tbspn Garlic powder
  • 4-6 Tbspn chili flakes
  • 3 Tbspn Salt
  • 2 Tbspn Black pepper
  • 1 Tbspn Rosmarin
  • 1 Tbspn Onion powder
  • 0,5 Tbspn crushed mustard seeds 8 (yellow)
  • Other Ingredients

  • 6 Pita Bread
  • 4 Pork neck steaks
  • 10 cl Tbspn Olive oil not to green in taste or sunflower oil
  • Finely chopped parsley
  • sliced fine lettuce
  • Tzaziki (Make in advance to let the flavors blend)
  • Tzaziki

  • 1 Cucomber, sliced in half, deseeded and grated with the skin on for extra flavor
  • 2 - 3 crushed cloves of garlic. Smoked garlic can be very elegant and nice as well.
  • 0.5 Liter of Greek yoghurt (at least 10% fat) or Quark (lighter)
  • A little of good not to green olive oil
  • Fresh finely ground black pepper and salt add to taste
  • sliced fine lettuce
  • Tzaziki (Make 1 day in advance to let the flavors blend). Add all the ingredients and mix together. Taste and adjust if needed. Put in the fridge.
  • Optional: half a cube of powdered chickenstock for a deeper sunny salty flavor

Preparation

1Gently roast the whole herbs and spices. Except the powdered spices and herbs. Mix the giros herbs and crush to a powder. Put the meat, oil and spices in a bag. Vacumm seal this and leave in the fridge for at least 1 hour. Better 1 - 2 days. The vacuum sealing drwans the flavor into the meat. Get the pork nack steaks with plenty of fat to cary the flavor.

2Heat the grill to 200 degrees celcius. Let the steaks drip and remove excess spices to avoid burning them. Cook the steaks for approx 4 - 5 minutes on each side. Do not overcook. Or sousvide the steaks and brown on the grill. At the same time grill the pita breads. Slice open. Let the nack steaks rest. Slice the nack steaks in thin stripes./p>

3Coat the inside of the pita with some Tzaziki, Meat, parsley, and when filled at some Tzaziki on top.

4Enjoy and save the rest of the spices for the next Giros adventure.
