Cheese Sauce with Gruyere

One of the best cheese sauce recipes in the world with an always perfect result. Important stick to the quantities and directions
Ingredients
- 50cl chicken stock, reduced to 20cl keep warm
- 30cl white wine, reduced to 3cl
- 130 grams grated gruyère or beaufort cheese
- 20 grams cornflour
- 25 grams soft cheese for exmaple Ricotta, Brie (No Skin), feta for extra tangy
- 25 grams of butter
1Mix the reduced stock and mix with the reduced wine
2Mix in the first cheesese and cornflower, mix well untill you have a wonderful sauce
3Reduce the heat and mix in butter to taste
Optional: Add a few drops of nut oil, truffle oil or a spoon of mustard
