So yummie and delicate. Bake your own pita bread and enjoy this wonderful alternative to hummus

Ingredients

  • 2 large eggplants around 600 grams
  • 30 grams/2 Tbspn Tahini
  • Salt to taste
  • 1 - 2 pressed gloves of garlic
  • 1.5 squuezed lemons
  • a little chili powder
  • Optional: 2 tspn liquid smoke if you do not grill the eggplant
  • Optional: 1 tspn smoked paprika
  • Optional: 1 tspn kumin powder
  • Optional: Serve with flat parslay or coriander roughly chopped and a little
  • Optional: 2 Tbspn greek yoghurt

 

    1Grill the eggplant (cut in two halves lengthwise. make cuts in the flesh side carefull not to cut the skin. Brush the top with olive oil. Add some wood in silverfoil inside the grill or oven to get the wood flavor. Grill for 45 minutes at 180 degrees (top heat as well). Let this cool down for 20 minutes. Cover a bowl to ensure you get the condensation liquid for additional flavor

    2Mix all the ingredients in a blender and mix and store cold. Include the liquid from the eggplants!

Then serve and enjoy.
