So yummie and delicate. Bake your own pita bread and enjoy this wonderful alternative to hummus
- 2 large eggplants
- 2 Tbspn Tahini
- Salt to tastes
- 1 - 2 pressed gloves of garlic
- 1.5 squuezed lemons
- a little chili powder
- Optional: 2 tspn liquid smoke if you do not grill the eggplant
- Optional: 1 tspn kumin powder
- Optional: 2 Tbspn greek yoghurt
1Grill the eggplant (cut in two halves lengthwise. make cuts in the flesh side carefull not to cut the skin. Brush the top with olive oil. Add some wood in silverfoil inside the grill or oven to get the wood flavor. Grill for 45 minutes at 180 degrees (top heat as well). Let this cool down for 20 minutes. Cover a bowl to ensure you get the condensation liquid for additional flavor
2Mix all the ingredients in a blender and mix and stor cold. Include the liquied from the eggplants!
3Strain the potatoes (ensure it is smooth) and add the other ingredients.
Then serve and enjoy.
