The dish for new years day in Iran. A delicious fish dish that catapults you to another nation. Fresh, light and jummy!
Ingredients
- 6 skinless filtes of fish
- olive oil
- 2 fresh lime juice
- 60 grams cilantro chopped
- 50 grams parsley chopped
- 30 grams mint chopped
- 1 tspn pomme granate powder or paste
- 0.5 tspn of saffron grinded to a powder
- pinch of salt and ground black pepper to tsste
Preparation
1F inely chop coriander, parsley and mint. Add lime juice, olive oil, pomegranate powder, saffron, salt and black pepper to taste
2Place fish fillets in a large oven proof dish. Pour the sauce over the fish.
3Cover with a sheet of aluminium foil and bake in a preheated oven at 180 degrees celcius 20 - 25 minutes. Baste the fish with the sauce at least once during cooking. When cooked, decorate each fillet with finely sliced lime and a little fresh chopped parsley and serve with Sabzi Polow rice or basmati rice.
