Saté Sauce TL-Style

Saté sauce is probably one of the like sauces next to mayonaise in the Netherlands. Below you find my fine tuned recipe for a wonderful sauce. Enjoy! Below the list of ingredients and some optional extras!

Ingredients

  • 6 Tbspn of peanutbutter (buy only 100% peanut peanut butter read the ingredients! before you purchase)
  • 1 fine diced medium sized onion
  • 2 Tbspn of Sweet Soya sauce (Ketjap Manis)
  • 2 - 4 crushed cloves of Garlic
  • 200 -400 Ml of Coconut milk (Optional)
  • 1 - 2 tspn of shrimp paste (Trassi of terasi)(optional) Get the black version not the grey one as this smells even worse :)
  • 2 tspn of Coriander (ketoembar)aim for whole spices and crush them yourself. Roast them before crushing
  • 2 tspn of Cumin powder, seeds (roast and grind)(djintam) aim for whole spices and crush them yourself. Roast before crushing
  • 3 tspn of Galangal (laos) powder or fresh finely chopped
  • 2 - 3 chilies finely chopped (Add to taste)
  • 1 Tbspn of peanut oil
  • 300 Ml of Water
  • 2 Limes or 1 Lemon zest of untreated fruit and some of their juice to taste

Preparation

1 First roast the spices and put in a spice grinder. Grind the spices (coriander, cumin, galangal).Prepare all the ingredients. If you use the shrimp paste first fry this in the pan with the oil. The smell is normal and will taste wonderful. Add the spices and the onion. Glaze the onions with the spices. Once glazed add the garlic and chili. Cook for another 2 minutes

2Add some of the water and the peanutbutter. Stir until you have a sauce like texture. Add some of the Sweet Soy sauce, optional coconut milk.

3Fine tune the taste to your liking with the lemon/lime juice, additional spices etc. Gently cook and becareful not to burn the sauce. This should have a nice "thick appearance. Enjoy!
