The most delicious soufle with lots of chocolate. This makes 4 Soufles in small ramskins and 2 large soufles

Ingredients

  • 50 grams of almond flour
  • 6 large eggs around 60 grams a piece yolks and eggwhite seperated
  • 3 grams salt
  • 75 grams melted butter
  • 5 grams baking soda
  • 20 grams of cocoa powder. Add vanilla if you like.
  • Equivilant of 75 grams of sugar with the sweetner of your choice or use sugar :)
  • Optional: 250 ML of cream for whipping and 3 drops of orange flavor
  • 1Preheat your oven 170 degrees. These will bake for around 13 minutes. not longer!

2Melt the butter and grease the souffle ramskins with a brush and melted butter in an upward motion. If you have crystalised sweetner or real sugar. Coat the inside of the ramskins gently. Shake it around. Give a nice sweet crust if you like that type of thing. Chill in the fridge for 20 minutes

3Mix the baking soda, egg yolks, cocoa, almond flour, vanilla and leftover melted butter and sugar

4Whip the eggwhites with the salt until you have good fluffy peaks

5Add a quarter of the eggwhites to the chocolate mixture and mix together. Once completed gently fold the rest of the egg whites in.

6Fill the ramskins with the souffle goodness. Gently circle the top outside with your finger. Ensure you fill the ramskins to the top and make it flat with a pattisier knife.

7Bake for 13 minutes (large ramskins and 9 minutes for small ramskins( at 170 degrees Celcius and enjoy immediatley with whipped cream with vanilla and orange. Cook longer if you want the center not to be wigly. I recommend 13 minutes gives the best result for the large ones.
