Vanilla Salty Almond Ice-cream

Salty almonds, super creamy ice cream. Simply delicous

Ingredients Recipe 1

  • 200 grams egg yolks around 13 - 14 eggs
  • 300 ml cream
  • 300 grams of condensed milk. You can use less to make it less sweet or use a ratio 2:1 with ful fat milk for a less sweet result
  • 100 grams of sugar
  • 3 grams of glycerin
  • 2.5 grams of salt
  • 1 - 2 sliced vanilla beans and seeds
  • 4 drops of almond flavor
  • Optional iced bath to cool it down

    1Mix egg yolks and sugar till the egg yolks mixture turns white.

    2With the vanilla bean and in the insidesHeat the cream and condense to 83 degrees. Then cool down to around 55 degrees Celcius. Add a little of the cream to the egg yolks mixture and quickly mix in. Avoid cooking the eggs!!! Little by little mix this in and bring back to 83 degrees Celcius untill it thickens a little for another 5 minutes..

    3Once you have the custard take it off the heat and add the salt, almond flavor, vanilla,

    PROTIP: Serve with fresh cream and chcolate sprinkles!Take some crushed pecans or bug chunks. Delicous. Or make some marzipan and fold little pieces into the mixture.
    PROTIP2: Wait until your ice-cream mixture has cooled to around 15 degrees celcius. Depending on your ice cream machine this will yield the best result.
Freeze around 3 hours before serving. Enjoy! Add cocoa nibs or pieces of chocolate :) I love roasted pistacio pieces.
