Sous Vide Pork Shoulder with a Curry Marinade

Wonderful easy going curried spicy sweet pork. Serve this with white rice and enjoy simplicity at tits finest

 

Ingredients

  • Sous Vide Machine Ready at 64 degrees
  • 1 KG porkshoulder
  • Marinade

  • 3 table spoons of powder sugar
  • 4 tspn garlic powder
  • 2 tspn smoked salt
  • 2 Tbpsn curry powder
  • 1 Tbspn of dried curry flakes
  • 1 tspn of powdered cloves
  • 1 Tbspn of black mustard seeds
  • Sauce

  • Liquid left in the sousvide bag
  • 25 grams of unsalted butter
  • 3 tspn of flour

Preparation

1Mix all the ingredients for the marinade

2Rub the meat with plenty of the marinade and put it in the sous vide bag. Vacuum and cook for 20 hours

3After the cooking dry the meat with kitchen towel to ensure it will fry nicely. Heat a pan with high temperature oil like sunflower oil or coocnut oil for a tropical taste. And fry the side nice and brown. Let the meat rest for 10 minutes. Or alternatively use a torch to crisp it up.

4Make the sauce. Create a roux by melting the butter. and add the flour. Whisk and cook for around 5 minutes till you get a nice smell like biscuits from the pot and the roux has nice light brown color. Then add the liquid from the sous vide bag and whisk until you have the right consistency.

5Serve with white rice.
