Mango Chia Dessert
Tropics in a glass a delicious dessert. Important the amount of fruit and Chia seeds. 1 part Chia to 2 parts Mango
Ingredients
- 3:1 Chia seeds and Liquid.
- 1:3 Liquid (50% coconut milk, 50% full fat milk) Recommend 250 Ml total liquid and 100 grams of Chia seeds. Mix to taste.
- 1 Vanilla Bean
- Honey to taste or Argave as a sweetener
- 2 – 3 ripe fresh mangos
- 3 grams of Agar Agar or Pectine
- Pinch of salt
- ½ tspn Cardamom
- 1 tspn Cinnamon
Preparation
1Add the vanilla seeds and rest of the bean to the liquid and warm gently for 20 minutes. Remove the bean and let the liquid cool down
2Add the chia seeds to the mixed liquid. Add a little salt, cinnamon, sweetener (honey etc.) and cardamom to taste. Cook up a little agar agar (1 gram or ¼ of a tspn) and add to the liquid mix gently. Put in the fridge
3Peel the mangos, slice of the meat and puree finely. Cook up a little agar agar ¼ of a tspn and add to the mixture. Mix gently and put in the fridge
4Once the mixture is coold down in the fridge. Layer them gently in a glass. Do not make the layers with chia seeds too thick as it is very rich. The ratio between mango and chia is important to achieve the right result. Enjoy!
