 Ingredientscoffee

  • 1.5 Liter of chickenstock ideally made by you (Keep the meat until the end or leave out). Alternatively purchase good quality beefstock.
  • 3 Table spoons of Quinoa
  • 1 whole Garlic bulb
  • Black pepper
  • Salt to taste
  • 1 Kilo Brocolli
  • 2 tspn of thymian
  • 2 tspn of rosemary
  • 2 tspn of marjoran
  • 2 - 3 tspn of instant coffee (or 2 - 3 short espressi)

Preparation

  1. Prepare the stock. Ensure this is not too salty
  2. Cook the broccoli in the beef stock together with the quinoa and the garlic bulb
  3. Let this cook for around 25 minutes
  4. Cool down the garlic and squeeze out the cooked garlic into the vegetables
  5. Blend everything fine. Take your time as texture is key! Should be like silk. Add the coffee. But taste as you go the coffee taste should be subtle!
  6. Serve in a nice plate. Garnish with a springle of instant coffee
  7. You can some flakes of chicken too taste and added texture. Cook the chicken in to the pot with the water and use this later for the soup. After 20 – 25 minutes take out the chicken and let it cool. Take the meat of the bones and slice in small pieces leave to the side. Just before serving add some chicken to the soup.

Wine Pairing

Enjoy this wonderful soup with delightful mediterranean touches. Pair with an aged Argentinian Malbec or a older Amarone from northern Italy.  Take a wine that is that is full bodied and has amber fruit that needs to have personality to work with the silky texture from the soup and the coffee.

This is a dish I cooked up during a cloudy day in Bern. I was in need of some culinary sunshine. I looked what was in the kitchen and this is what was created. Tasty and fresh! Spingtime at home!

IngredientsRosemary bush small

  • 500 Gram of Chicken Filt
    500 gram of Mushrooms
    400 Grams of Paprika any color
    500 Grams of cherry tomatoes
    2 tspn. of fresh garlic
    3 Tbsp. flour
    1 - 2 tspn.marjolan
    1 - 2 tspn.thymian
    1 - tspn. garlic
    1 tspn. Rosemary
    Olive Oil
    Optional 1 Lemon (Organic and not waxed)

Preparation and Cooking

  1. Chop the mushrooms, peppers, onions not too small
  2. Slowly fry them in a little olive oil and set a side one cooked
  3. Cook the quinoa add a little beefstock to the water (Normally 2 parts of water to 1 part quinoa) add additional herbs to taste to the quinoa. Becareful with salt as the broth already has salt! once cooked set a side
  4. Set the quinoa aside
  5. Chop the marjolan, thymian, rosemary, blackpepper in a blender fine. Add the flour and mix again. 
  6. Cut the chickenfilet in bite size pieces and coat in the flour herb, spice mixture
  7. Add olive oil to a pan and slowly fry the chickenfilet once cooked set a side.
  8. Half the tomatoes and slowly cook them. Add the garlic
  9. Now combine the quinoa, tomatoes, mushrooms, peppers and chicken together

Wine and Serving Suggestion

To taste you can add a little of lemon juice and lemon zest to the quinoa to give it a more southern european taste. Serve in a bowl and enjoy. Pair with a nice glass of rosé.

Tropical SunshineGrünes Smoothie

Healthy and fresh. Pineapple is delicous but do not eat too much!

Ingredients

  • 1/2 of a pineappel in large pieces (Peel it)
    2 -3 Passion fruits

Preparation

Blend the pineapple with your mixer. Then add the fruit of 2 passion fruit. Enough for 1 - 2 persons

Hulk Smoothymint small

Green and filled with strength

Ingredients

  • 1 - 3 Granny Smith Apples
    Ginger
    A little crushed ice
    Mint

Preparation

Mix all togehter, add the ginger to taste. Sweeten with a little apple juice if needed

Dutch Sunshinecocos small

Ingredients

  • 100 ml Cocos Milk
    1 - 2 Mango
    1 Lime

Preparation

Peel and mix the mango andd add some lime juice. Cool the juice.
When it is cool add the cocos milk and enjoy!
Cool the juice after 1 - 2 hours
Mix with 90 ml cocos milk.

All of these smoothies are delicious and kick start your day. Combine these with a delicious Omelette with a sliced advocado and tomato. This will propel you into the day!
