Grape variety

90% Mourverde 10% Genache 

Terroir

Soil of clay and stones, full of limestone, white chalk, from the Trias geological period (beginning of second era). Triasic soil is responsible in the finesse of tannins, and the minerality of the wine. Surface : 30ha of terraces on the slopes , planted up to 900 feet, just above the Mediterranean sea. Average age of the vines, 30 years.

Winemaking

The maceration takes place in small stainless steel tanks only. One manual pigeage per day, for the extraction of fine skin tannins. Long maceration of 20 days minimum. ELEVAGE for 19 month in large oak barrels (casks). One single cuvee, one single bottling (in June 2002). Bottled neither fined nor filtered. Production: about 10.000 cases.

Tasting

Talking about wine... This particular wine opens another windows into the wine universe...  A nose that is a little subdued and distant. Give this wine time and some air. . The chanting of the berries starts gently.... But increases. The wine does not invite you but commands you to  initiate the ritual tasting. Pencil shaving note  starts the rituel like the exhuberent journey of a pencil pusher... But in this case exceptional and wonderful. The color is youthful and straight forward red. The color inititiates the journey of complete obidience. The cocoa lifts the tropical vela that is very provencial by the look of things. The tannic structure is build like a miniature Eiffel tour. Elgelant but stands very tall in the universe of stellar wines. Once passed the granit safe doorway a world of happiness awaits with stringend creme de cassis tannins and tabacco tannins controling your way. The initial provencial herds and red berries remind you again that youth can be so complex. This wine is ready to drink but not ready to drink. You can keep this almost forever. Forever is the most ungrateful recipient of time. In the quintecense of centuries this wine demands to be drunk with exceptional ellegance and virtue as it is so true to its heritage. Chapeau!

Vintage

Great year full of symbol, and great vintage in the deep south of France. Cold winter with lots of rain, created good water stocks in the soil, beneficial during the dry summer. Then a nice and warm spring. Long and slow ripening under the summer sun. Very nice weather during harvest, with strong mistral wind and no rain.

Harvest

Hand picked grapes with a small team of pickers. This allows us to stretch out picking dates, to maximize the opportunity of harvesting each variety at its best moment of maturity. Selection and triage of grapes made in the vineyard (if necessary) Our goal is to pick all grapes at minimum 13.5 degrees natural. Harvest started at September the 12th, and finished at October the 5th.

Yield

37 hectoliters per hectare. 7500 cases and 3500 magnums.

This wine creation truly adds additional weight to the already excellent reputation of wines from Cassis. The color is light golden and gentle with a beige hue, a moderate dark shadow of elegance glimmers in the glass inviting you to taste. The journey begins a light provencial herbal and flore note follow by elegant anise aromas even do they are very subtle. The mouthfeel is fresh and deep in an instant and communicates the complexity and depth of this wine. The minerality and floral notes truly start a wonderful symphony that continues with notes of light anise, young apples, sweet wood or white licorise. A smudge of vanilla enters the concert but leaves again quickly. Everything is surrounded by springtime floral notes paired with such a wonderful viscosity that is second to none with a light bitteresque finish making you desire just another sip of this sumptious oenological creation that is just waking up. In 24 months this wine will embrace you with additional intensity and elegance. Be patient it is worth the wait.

Great wine bar, nice little restaurant. The do courses as well and wen around do call by even do it is not located in one of the most charming surroudings.
