Korean Fried Chicken

A dish I truly enjoy. Comfort food and style and class.

Ingredients Chicken

  • 1000 grams whole chicken, cut into pieces or chicken use boneless chicken thighs
  • 30 grams rice wine
  • 10 grams minced ginger
  • 5 grams salt
  • 3 grams ground black pepper
  • 220 grams potato starch or corn starch
  • 1.5 cm of peanut oil for deep frying
  • Ingredients Sauce

  • 45 grams tomato sauce / ketchup
  • 30 grams to 40 grams gochujang (Korean chili paste)
  • 60 grams honey
  • 50 grams brown sugar
  • 30 grams soy sauce
  • 30 grams minced garlic
  • 15 grams sesame oil

 

    Instructions

    1Maninate chicken for several hours idealy one day before in vacuum

    2Fry the first time for around 8 minutes till cooked and brown (shallow fry). Let cool and fry a second time for 3 - 4 minutes

    3Warm the sauce and coverthe chicken and stir. Add sesame (roasted) and a finely chopped green onions

    4Serve with jasmin rice. And a gurken, lime, coriander salad

I love this with coconut rice add some shredded coconut.
