Frittata di Pasta

An Italian classic for the left of pasta the next day or just to cook fresh. Comfort food at the highest level and uhm yes vegetarian!

Ingredients

  • 300g spaghetti or other pasta already cooked. You can use leftovers anything you find tasty!
  • 2 eggs
  • 100g mozzarella or parmesan grated( Add more if you like it super cheezy :))
  • 1-2 Tbpns butter
  • salt
  • pepper
  • Olive oil for frying

Preparation

1In a large bowl put the pasta, eggs, cheese, and mozzarella chopped, pepper, a pinch of salt and butter. Mix well. In a large pan heat a little 'oil and pour pasta. Let it simmer but not too hot. When the dough is golden turn the omelette helping with a plate and continue cooking until you have a  beautiful golden crust on both sides. You can serve it hot to lukewarm.
