A wonderful sunny soup for those dark days. Love it.

Ingredients

  • 1.5 Liter of chickenstock ideally made by you (Keep the meat until the end or leave out). Alternatively purchase good quality chickenstock.
  • 1 Kilo Brocolli
  • this fine coconut gel (250 ml coconut milk wiht 0.25 tspn of agar agar. Cook together and cool down. Put in a squeeze bottle
  • 2 tspn cocoa powder
  • 2 Tbspn cocoa nibs

Preparation

  1. Prepare the stock. Ensure this is not too salty
  2. Cook the broccoli with the stock together
  3. Let this cook for around 25 minutes
  4. Blend everything fine. Take your time as texture is key! Filter if needed. The soup should be like silk.
  5. Serve in a nice plate. Garnish with the cocoa, coconut gel drops and finally with the cocoa nibs
  6. You can some flakes of chicken too taste and added texture. Cook the chicken in to the pot with the water and use this later for the soup. After 20 – 25 minutes take out the chicken and let it cool. Take the meat of the bones and slice in small pieces leave to the side. Just before serving add some chicken to the soup.

Wine Pairing

Enjoy this wonderful soup with delightful mediterranean touches. Pair with an aged Argentinian Malbec or a older Amarone from northern Italy.  Take a wine that is that is full bodied and has amber fruit that needs to have personality to work with the silky texture from the soup, coconut and cocoa
