Dahl Remy Style

Dahl mean lentils in Indian. I love lentils they are healthy and tasty. Try this version of my Dahl ala Remy. A great dish to make a day or 2 in advance to let the flavors dance together.

Ingredients

  • 500 grams washed lentils. Try different types to get a creative different result
  • 3 tsp turmeric
  • 2 tsp garam masala
  • 2 tsp ground coriander
  • 75 grams of fresh ginger, finely grated
  • knobs unsalted butter
  • 4 tsps cumin seeds roasted
  • 2 onions finely chopped
  • 4-6 cloves garlic, finely sliced not pressed!
  • 1-2 fresh green chillies finely chopped
  • 2-3 tomatoes, chopped small and remove the green bottom
  • 1 can of creme coconut milk

Preparation

1Add 1.5 liters of water to the lentils and start the cooking process.

2Roast the cumin seeds for 2 - 3 minutes. Add some oil and fry the onions gently till glazed. Add the garlic and continue to fry for another 10 minutes slowly.

3Add the chilies to taste, gartam masala, coriander and fresh ginger. Cook for another 5 minutes and add to the lentils in the other pan.

4Gently cook together for 1 hour or longer. If you like add the coconut milk to give it a more cremy texture.
