Caribbean Garlic Chili Pepper Sauce

Off to the sunshine, beaches wonderful food. One of my favorite parts of the world.

 

Ingredients

  • 9-12 bird peppers (birds eye) finely chopped (wear gloves)
    3 scotch bonnet peppers finely chopped (wear gloves)
    4 cloves garlic finely chopped
    1.5 tspn finely chopped parsely
    1 scallion finely chopped
    20 CL vinegar
    1/4 tspn salt to taste
    1/4 tspn white sugar to taste
    2 leaves shado beni (or 3 tablespoon of rough chopped clantro)
    1 lemon (or 2 lime) juiced
    1 shallot finely chopped
  • Preparation

1Combine all the ingredients together chopepd by hand or in a food processor becareful not to "puree" everything but pulse it and cool in the fridge. You need a chunky appearance and texture.

Idea: Add some pineapple, mango or banana chunks.... Delicious
